Pumpkin French toast

  • 1 Au Pain Doré nut and raisin bread
  • 3 eggs, at room temperature
  • 1 cup of milk, at room temperature
  • 1 cup of pumpkin puree
  • 2-3 tablespoons of maple syrup
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of pumpkin spice
  • Unsalted butter for cooking
  • Whipped cream
  • Maple syrup
  • Chopped pecans


Slice the bread into approximately 1-inch-thick slices.

Beat the eggs in a large bowl. Add the milk and mix. Then, add the pumpkin puree and beat again. Incorporate the maple syrup, vanilla extract, and pumpkin spice, and mix until all the ingredients are well combined. Set aside.

Preheat a large skillet over medium-high heat and melt 1 tablespoon of butter.

Using tongs, dip a slice of bread into the pumpkin mixture and place it onto the skillet. Cook on each side for about 3-4 minutes, or until golden brown.

You can serve your French toasts with whipped cream, maple syrup, and chopped pecans.
